How to record multiple clips on top of each other in the one track (arrangement view)?

When I record a clip on top of another on the same track the one underneath seems to get deleted. Same thing if I am moving clips around within a track and at some point there's an overlap, the one underneath gets cut (I realise in this instance I can pull the end of the clip out to reveal the rest of the data) or deleted.

Are there some settings I can change so this doesn't happen? 

I've worked with Cubase and Logic before and there you can record many regions (clip) on top of each other within a track and then sort through them - I'm hoping this is also possible in Ableton.
