Structure and process for digitalizing vinyls

I'm planning to digitalize my vinyls and do so with Ableton. I wonder a bit what might be a good structure for this?
Have a separate project for every disk? Then it probably would be easier to keep audio settings separate like input gain etc.
Or have all recordings in the same project?
Anyone did this before? Any other software you would recommend for this?
The goal is to have my collection ready to use in digital DJ environments. So ideally Ableton should be record or export to a format that current DJ equipment uses.

You can do this in every audio editor like wavelab, audacity and also ableton live. If you want to do this in Live, I would proceed as follows: record the vinyl as a whole in 16Bit/44,1kHz and normalize it at the same time. Then cut and name the 1st track and export it individually (as a wav or aiff file) - either as a track or clip and so on ...
