When I use acapellas I often through in the original song and warp that. Then I add the acapella so it syncs with the original then remove the original. I do the same thing. I can tell you that I have been told that the answer to your last question (can multiple controls be mapped to the same destinations?) is no. I would assume that the answer to 1 is no also, given how Live 5 currently handles GUI manipulation w/r/t controller assignments - but I couldn't say for cert...
