I just downloaded Audacity for Mac. Pretty good but only exports in 16 Bit. Which version of Audacity did you download? I have the latest beta (v1.2.0pre3) for Windows XP, and it most definitely can export as AIFF in all flavours (8-bit, 16-bit, 24-bit, 32-bit). So I assume the OSX version can too....
