Max for Live Instrument presets: Are they mostly glitchy and bleepy?

They for the most part seem to be tone generators, and not "synth" type of sounds.

Completely depends on the type of synth/device you use. And even if most presets are 'glitchy', they are still full software synths which means you can theoretically make almost any sound you want. Especially if you add effects.
But you will need to do some work for that and understand the basics of synthesis.
Some websites also offer additional presets for Live's synths, so that might also be an option. But like i said: a few adjustments can get you almost any sound you would ever like.
