Bitstream user here, but with no adequate tech. knowledge. :( I've got the protocol and try to find some information to get something started. I'm thinking about a Joystick (which feels better than the bitstrem's one) and something monome like. Don't know if it's possible to get visual feedback on the buttons.............will have a look.

What would you create with the open control protocol?

cool... i2C is the same protocol the Wiimote uses for it's expansion port... since it's a digital protocol you'll have to get into microcontroller programming if you want to mess with it. I recommend the Arduino: http://arduino.cc

There's almost no overhead to get started programming with that board, and there's a fairly active forum with friendly people to help out.
